Mindy's Crab Stuffed Mushrooms
1 pound fresh mushrooms
7 ounces crabmeat
5 green onions, thinly sliced
1/4 teaspoon dried thyme & dried oregano
Ground black pepper to taste
1/4 cup grated Parmesan cheese & Mozzarella
Directions: Preheat the oven to 350 degrees. In a medium bowl, combine crabmeat, green onions, herbs, and pepper. Mix in mayonnaise and 1/4 cup Parmesan & Mozzarella cheese until well combined.
Wipe the mushrooms clean with a damp towel. Remove stems. Fill the mushroom caps with rounded teaspoonfuls of filling, and place them in an ungreased shallow baking dish. Sprinkle tops with Mozzarella. Bake for 15 minutes.
Mike's Valentine's Day Red Velvet Cake
Icing: 1 8oz bar of cream cheese
1 pound of confectioners sugar
2 teaspoons vanilla extract
Mix together - you may add a tablespoon of milk if too thick. Ice the cooled cake - add colored sprinkles to the top.
Directions: Use a heart shaped cake pan. Follow direction on box of Red Velvet Cake Mix. Make the cake. Take strawberries and dip into the melted chocolate of your choice (I use dove chocolate). Cool and let harden and place around cake!
